Breakfast Cookies

 

If there is one thing I have learned about getting my kids out of the house in the mornings for school, it is that the biggest hold up seems to be in what to eat for breakfast.  As a mom I am constantly on the lookout for healthy breakfast ideas that are also quick and easy.  Well, with these delicious breakfast cookies (yes, you read that right, I said breakfast cookies) I feel like I’ve finally hit the jackpot.

Not only are these cookies filled with healthy goodness–things like raisins, oats, carrots, walnuts, and whole wheat flour–but they have very little sugar added to them and they taste amazing. So amazing that I ate two as soon as they came out of the oven.  Oops.

These cookies are great with coffee, or as a quick but wholesome breakfast as you and your kids are running out of the door in the mornings (we had 19 tardies last year, so put us in the ‘running out of the door’ column).

There are a lot of ingredients in these cookies – but don’t let this ingredient list scare you because the end result will be so very worth it, I promise! I picked up all of my ingredients at Walmart using Great Value branded products when possible, and I figured out that I can make close to 8 batches of these cookies with the ingredients that I purchased there – and I did it all for under $15.

 

Breakfast Cookie Recipe

 

Ingredients:

  • 3/4 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons ground nutmeg
  • 2 tablespoons salted butter
  • 1/4 cup canola oil
  • 1/3 cup dark brown sugar
  • 4 tablespoons granulated sugar
  • 1 egg
  • 1 small jar carrot puree baby food
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup rolled oats
  • 1/2 cup bran cereal flakes
  • 1/3 cup raisins 
  • 1/3 cup chopped walnut pieces

Directions

Preheat the oven to 350 degrees.

In a medium bowl, combine the baking soda, cinnamon, nutmeg, pastry flour and all-purpose flour.

In a large bowl combine the butter, oil, and sugars until all of the sugar is dissolved. Add in the carrot baby food, vanilla, and egg and beat until well blended. Add the flour mixture and stir gently to combine. Add the oats, raisins, bran flakes and nuts and mix until well combined.

The dough will seem somewhat runny and not completely cohesive–it will be very sticky–this is normal.

On a non-stick baking sheet form balls of dough that are roughly the size that you want your cookies to be.  Because there is only one egg in this receipe you will notice that the dough does not expand much during cooking.

Bake for 10-12 minutes, depending on your oven. Cookies will be soft and and you will be able to smell them baking throughout the house!  Enjoy!
